Over the years, Ipanema Coffees have been a mainstay of our seasonal collection, prized for its meticulous processing and sublime flavour profiles.
This natural processed lot is beautifully structured with jammy sweet notes. Expect top notes of chocolate mousse and damson jam, with a hazelnut finish. Pairs well with milk.
This coffee is recommended for Espresso, stove-top, pour-over and Aeropress.
Origin Story
This micro-lot comes from Fazenda Rio Verde located in the Mantiqueira mountains in South-eastern Brazil.
Lot B23 is part of the Premier Cru program where the highest altitude lots produced on the farm are hand-picked and separately processed lot-by-lot. The farm is divided into 69 individual plots (known as 'Glebes'), and the best 35 Glebes were selected for the 2022 harvest. These lots were harvested and processed as unique lots which are identified by a code (e.g. B23, in this case). The letter B refers to the coffee variety (Yellow Bourbon) and the number (35) refers to one of the 35 Glebes.
Processing
This 100% Yellow Bourbon lot was selectively hand-harvested and then processed using the natural processed method. The cherries were dried on a conventional patio for 44 hours and for an additional 50 hours in vertical dryers.
